Fresh Mozzarella Cheese is one of my family’s favorite dishes. I make it myself at home about once or twice a month. Not only is it a fun thing for kids to make, but it also is great to serve at parties.
You mix the gallon of milk with the citric acid and water. Then heat it to 90 degrees and add the Rennet. Let it sit for 5 minutes. After 5 minutes curds will have formed. You cut the curds and heat until it is 105 degrees.
Let it sit for 5 more minutes and then you separate the curds and whey. You can save the whey to use in other things (they have recipes in the book for pizza crust with whey). Put the curds in a microwave safe dish.
After microwaving for 1 minute the curds will be soft and shiny. You start to stretch it like taffy. This can be a lot of fun for kids to help with.
After stretching for a few minutes you can roll it into a ball or log. The cheese kit goes into way more details then I have. One gallon of milk will make one pound of cheese. So you can make a gallon of fresh mozzarella for around $3.50 with the price of the cheese kit included. It’s a fun cooking project to do with the kids and get fresh mozzarella for a good price.
