I needed to make a sweet treat for my book club the other day and came up with a dish that my family loves. These almond & cream cheese bars are easy to make and can be made a couple days in advance. They are so sweet and creamy, without being a complete sugar shock.
Melt two tablespoons butter in a pan on low heat. Add 1/4 cup brown sugar to the pan and cook until combined. Remove from stove and allow to cool. While the mixture is cooling place half of a seamless dough sheet in a 9 by 9 greased pan.
Next mix 1 package cream cheese, 1/4 cup sugar, 1/2 egg, and 1/4 teaspoon Almond extract in a bowl and beat until until combined. Spread cream cheese mixture over dough until even.
Now that the brown sugar mixture has cooled add 1/2 egg and 1/2 teaspoon cinnamon to mixture. Spread out brown sugar mixture on top of cream cheese. Sprinkle about 2 tablespoons of crushed almonds over dish.
Put the other half of seamless dough on top of the mixture and bake in oven at 350 degrees for approximately 25 minutes or until golden brown on top. Sprinkle a small amount of powered sugar on top. Cool and cut, then store in refrigerator. We love them cold straight out of the fridge.
