If you love the soft light texture of Lofthouse cookies this is the recipe for you. These are a soft cookie with no crunch at all. My family loves how light and sweet these are. Plus they are fun to make and decorate.
Start by mixing margarine and powdered sugar until its a cream. Then add the egg and vanilla. Combine flour, baking soda, and cream of tartar in separate bowl. Add to the wet mixture. Once well mixed remove and let sit in fridge for 30-45 minutes. This will make the dough easier to work with.
Once it has sat for 30-45 minutes, place on well floured surface and roll out to about 1/4 of an inch. Then you can cut out your cookies. We used hearts for Valentine’s Day, but I have done all sorts of shapes before.
Place on a cookie sheet and bake for 15 minutes at 250 degrees. Do not let them brown, if you do they will be crunchy. Remove from oven and let cool. Once they are cool, mix together powdered sugar and milk in a small bowl. If you want to add food coloring now you can do so. Put the icing in a small ziploc bag. Cut a small hole in the ziploc bag. You can now slowly pipe the icing onto the cookie. I start by making a line around the cookie.
Then fill in the cookie by making a zigzag line across the cookie.
The icing will slowly spread to cover the cookie.
If you want to add a second layer in a different color allow to harden for at least 10 minutes first. Then add second layer. Enjoy!
