Summer is almost here! I love the warm weather, sleeping in and no homework. However, summer can be expensive. We are constantly on the go and meal planning can be difficult. This is one of my families favorite recipes. It’s easy to make ahead of time and throw in the cooler for the pool or baseball game. Plus they don’t take a lot of time to make.
Mix 4 oz. cream cheese and 1/3 cup mayo in a bowl together. It helps if the cream cheese has softened for a while.
Cut up a pack of turkey lunch meat into small strips. I like to use the Oscar Mayer Smoked Turkey. Once it is all cut up add it to the bowl of cream cheese and mayo.
Mix up the cream cheese mixture and lunch meat. Add the basil to mixture.
Divide the mixture into fourths and place into four tortillas. Try to keep away from the edges, it makes it easier to roll.
We love our turkey wraps with avocado and cashews. I just cut up one avocado for all four wraps. Sprinkle some cashews over the top and roll up into a wrap.
I like to make them the night before and put them in ziploc bags. It’s easy to change the ingredients if some people don’t like nuts or avocados. I just label the ziploc bags based on what I put in them. These are great to take just about anywhere.
Avocado Turkey Wraps
9 oz. Turkey Lunch Meat
4 oz. Cream Cheese, Softened
1/3 Cup Mayo
4 Wraps
1 Avocado
1 Tbsp. Cashews
1 Tbsp. Dried Basil
Mix cream cheese and mayo together in a bowl. Chop up turkey into small strips. Mix turkey and basil into cream cheese mixture. Divide the mixture between four wraps. Cut up one avocado and divide between the wraps. Sprinkle cashews over wraps and fold. You can store in refrigerator for up to two days.
