I am terrible about getting up in the morning those first few weeks back to school. The last thing I want to do is go into the kitchen to fix a warm breakfast. If I don’t plan ahead, my son ends up with breakfast bars and morningstar bacon. I try to make sure I always have a casserole that we can just throw in the microwave. I originally had this Apple Strata casserole years ago at a book club. It is so easy to throw together and can be made in the oven or the crockpot. I love waking up and having a hot breakfast waiting for me in the crockpot. The original recipe calls for bacon, but I have used sausage before too.
I start with two apple turnovers. You can find them in the freezer section, in the refrigerated section with the biscuits, or in the bakery section. I usually can find some on clearance in the bakery section. I slice up the apple turnovers in long strips and then add them to the crockpot. Make sure you spray your dish first with a cooking spray. It makes the Strata come out easy.Then I add 4 strips of cooked bacon that have been crumbled to the the crockpot.
I then add two cups of shredded cheddar cheese on top of the bacon and turnovers. In a separate bowl mix 6 eggs, 3/4 cup half and half, and 2 cups milk. Pour the egg mixture over the cheese, bacon, and turnover.
Turn the crockpot to low and allow to cook for about 4 hours. This works great if you have a crockpot that you can set on a timer before you go to bed. It can also be cooked in a 8 x 8 dish for 50 minutes at 350 degrees.
The apple in the turnover gives the Strata such a great flavor. I love the flavor that happens when the apple and bacon blend together. It’s such a great recipe to throw together for a school day or serve it up for a brunch. Everyone will love it.
Rise and Shine Crockpot Strata
2 Apple Turnovers
2 cups Milk
3/4 cup 1/2 and 1/2
6 eggs
2 cups shredded Cheddar Cheese
4 slices bacon or 2 sausage links
Mix the milk, cream and eggs in a separate bowl. Pour the egg mixture over the turnovers, cheese, and bacon. Set the crockpot for approximately 4 hours on low. Allow to cool and serve.
You can also bake for approximately 50 minutes at 350 degrees. Enjoy!
