Tilapia is on sale this week at both Kroger and Meijer. I love Tilapia because it is inexpensive and healthy. I really enjoy High Liner Tortilla Crusted Tilapia however they can be expensive, so I started searching to a recipe that was easy and inexpensive.
I found a great recipe on Skinny Mommy and I thought it was pretty easy to make. The fish only takes a few ingredients and there is a wonderful sweet corn salsa. I have changed some of the recipe, you can see the original recipe over here.
3-4 thin tilapia filets
2 cups natural tortilla chips
1 TBS taco seasoning
Egg (stirred well with a splash of water)
vegetable oil
Large ripe tomato, chopped roughly
Can of Corn
2 TBS cilantro, chopped
1 avocado
Juice from 1/2 lime
1/4 tsp salt
Put the tortilla chips and taco seasoning in the food processor until a breadcrumb-like consistency forms. Put them on a plate. Heat 1-2 capfuls of vegetable oil over medium heat, letting it get very hot. Dip the tilapia filets into the egg and then dip them in the tortilla chip mixture. Add the tilapia to the hot pan about five minutes on each side. To make the salsa, heat the corn over medium high stirring frequently. Cut the avocado into chunks and add it along with the corn, cilantro, chopped tomato, lime juice to a bowl. Add the salt and toss gently. Pile high onto the tilapia.
