Last night I made my bean and cheese enchiladas. It is a such a easy recipe and very inexpensive to make. I usually buy Old El Paso Enchilada sauce, because there is almost always a coupon for it and Meijer or Kroger has it on sale regularly. Right now there is a $.60/3 coupon you can print.
Ingredients:
1 Can Black Beans
1 medium size onion, sliced thin and fried
1 can Enchilada sauce
8 oz. of cheddar or taco cheese
6 Flour Tortillas
I fried up the onion a couple days ago, so I don’t have pictures. I just put in a frying pan with a little bit of oil for 2-3 minutes.
I put a small amount of enchilada sauce in the dish, just enough to cover the bottom.
I put 2 spoonfuls of black beans and the fried onions in a Tortilla.
Add some cheese on top. I just grab a small handful. Add more if you like a lot of cheese.
Roll them up, place them in the dish and coat with the rest of the enchilada sauce. Put them in the oven at 350 degrees for 15 minutes.
Add more cheese on top and return to oven for 5 minutes or until cheese is melted. These are great for a quick meal during the week. I love to serve them along with chips and guacamole.
