I made roasted carrots last night for part of dinner. I buy the Earthbound carrots at Meijer when they go on sale for free or $.25. They will last in the fridge for a month or longer. They are really easy to make and very inexpensive. They taste more sweet like sweet potato fries than carrots. The recipe comes from a Cooks Illustrated cookbook.
1 1/2 pound carrots, peeled
2 tablespoons unsalted butter, melted (I just use whatever margarine I have in the house)
1/2 teaspoon salt and pepper
Heat oven to 425 degrees. Cut the carrots in half crosswise, then into halves or quarters to make them the same size. In a large bowl combine carrots with butter, salt and pepper. Toss to coat. Spread them out on a foil rimmed (I just use Silpat) baking sheet.
Cover the baking sheet with foil and cook for 15 minutes. Remove foil and cook for 30-35 minutes, stirring twice during cooking.
They are great to serve with a sandwich. My son and husband will eat them and normally they won’t touch carrots.
